[RECIPE] Savory Oatmeal with Pine Nuts and Avocados

Hey guys,

I recently shared my experience with you on savory oatmeal! I’m back with the actual recipe. This recipe has minimal ingredients and super quick prep. Check it!

Ingredients:

  • 1 tablespoon pine nuts
  • Drizzle of olive oil (1/4 teaspoon)
  • 1 cup water
  • 1/3 cup steel cut oats
  • Pinch (literally just grab a small amount in between your index and thumb) of black pepper, salt, garlic powder, red chili flakes, dried (or fresh) chives
  • 1 egg
  • 1/2 avocado

Instructions:

  1. Add pine nuts and olive oil to small sauce pan
  2. On medium heat, toast with constant stirring (only 1-2 minutes) until lightly browned. Remove to plate and set aside
  3. Add water to sauce pan and let come to boil. Add oats and all spices
  4. Lower heat and cook for 3-4 minutes
  5. Add egg and quickly mix into oats until cooked (1/2 minute)
  6. Pour in bowl and top with avocado and pine nuts
