RECIPE: Sweet Potato Fries

Hello all,

Sweet potatoes are a great starch option that can be prepped in many ways. The easiest being baked while in the skin (you literally just throw it in the oven and leave it alone for an hour). But if you’re looking to spice it up a bit oven baked sweet potatoes are delicious! One of the tricks to crispy sweet potatoes is adding a little corn starch to the seasoning mix as well as making sure they aren’t too crowded in the pan.

I made this recipe twice in the last week and I found that if you let the potatoes set in the seasoning for sometime they turn out SO MUCH BETTER. The internet is full of variations of this recipe but this is what I found that worked for me.

Ingredients:

  • 2 large sweet potatoes (8″ long)
  • 1 tablespoon olive oil
  • 3/4 teaspoon cornstarch
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cinnamon

Instructions:

  1. Preheat oven to 425F (or for added flavor allow sweet potatoes to sit in following seasoning for an hour prior to baking)
  2. Peel sweet potatoes
  3. Microwave sweet potatoes 4 minutes (optional but sweet potatoes are a very hard vegetable and can be difficult to cut – be careful)
  4. Cut each potato into fries (use photos here to help guide slicing: http://thepioneerwoman.com/cooking/sweet-potato-fries/)
  5. Toss the potatoes in the olive oil and all the above seasonings; you can do this in a big resealable bag or just a large bowl (I used a bowl)
  6. Place a layer of aluminum foil or wax paper on a large cookie sheet, spray lightly with nonstick spray, and place potatoes in a single layer with a little bit of space. This ensures they cook crispy!
  7. Bake for 30 minutes, turning once (it’s a bit annoying but helps create a more crisp potato) halfway through
  8. Broil for 1-2 minutes at the end if desired for crispier potatoes
  9. Sahtain!

 

These are incredibly delicious on their own or with a dipping sauce that’s either sweet or spicy. We went with a Spicy Ranch Dipping sauce (found here: http://themerrythought.com/recipes/baked-sweet-potato-fries-w-spicy-ranch-dip/). I would recommend subbing the sour cream for plain or Greek yogurt though.
